I love the idea of carrot cake but somehow I always been disappointed with the recipes I tried so far. Some are too rich, other take the “healthy route” in a way I don’t quite like. But this cake, as far as I am concerned, is THE carrot cake. Spicy, moist, soft and with the right amount of chewiness, this is the cake you want to enjoy with a warm cup of oolong tea. Or even hot chocolate. And yeah, it happens to be gluten-free and not too loaded in fat or sugar, but that’s not the point, trust me.
